I was in Long Beach for 5 days then home for 2 then off to Portland for 5. Let's just say healthy eating and travel don't always go together. So last night we started back on our vegan diet with some yummy black bean and butternut squash burrito's from Oh How she glows blog .
As we hit mid summer, I really need to get going on weaving for the guild sale. It's just hard to get anything done during the week. Then with being gone on weekends, not a lot is getting done. Hopefully I'll make progress this week. I'll keep you postedslobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-14969702435807885532012-07-09T13:13:00.001-07:002012-07-09T13:14:09.874-07:00Being vegan is a work in progress. I'm trying for five out of seven days. the weekends are the hardest. I don't understand why Mark has lost weight and is all skinny and I haven't lost a pound. The hardest part seems to be cheese. Even the vegetarian cookbooks I have all use cheese.
We have grapes in our backyard.

I turned them into pickled grape leaves.

Now I need a stuffed grape leaf recipe. hopefully a vegan oneslobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-77280992720157497532012-06-28T19:36:00.001-07:002012-06-28T19:36:11.310-07:00well another vegan dinner is well done. And I avoided cheese at lunch time
Sometimes juggling one's commitments is like being in a circus.
So, happy hour tomorrow is on: 5:00 my house
Magic Mike is postponed until July 12.
Live oak festival was great . My favorite group was Melody of china. They play beautiful melodious music on traditional chinese instruments; not at all like what my father listened to when I was growing up.
Here's a recipe for a vegan omlette. I used soyrizo as the filling. If you haven't tried soyrizo, you've got to give it a try. It tastes just like choizo but w/o the fat.
Jessica and I had dinner at sidecar last night. Good food and good drinks. And yes you can eat vegan there. We had Red Quinoa Tabouleh, very yummy but a bit salty.
My 21 day kickstart india trial has come to an end but I am going to try and stay vegan as much as possible. I've learned that cheese and seafood are my weaknesses. I think seafood is ok depending on how it's cooked ( not fried). I do plan to continue as much as possible.
Today's adventure was taking Anika to get a Pygora goat. It was love at first sight for Anika!
It's fine different threading patterns wide and 12 different treadlings. Each treadling is done in 4 different colors (beige, dark, light and 2-tone). It's almost 4 yards long. Now I get to start really making something!
NOT!. I hate Mondays and they hate me back. I work in Los Osos on Mondays and not my usual office in SLO. The computers hates Monday too and hence they don't work. Sometime between Fri and Sun they party too hard or whatever then don't show up to work. It's hard to work with an EMR when the "E" part is missing.
Being vegan was a challenge over the weekend. I had already planned that we would be off the diet a bit. Meat wasnt' the issue but the cheese and sour cream were tough to avoid. Altogether my only slip was bit of feta cheese and a pork rib.
There's no picture of last nights dinner because Mark asked for a night off of Indian food. Instead I used Smart Meat to make a spaghetti sauce and put it over whole wheat past.
Next weekend we'll be camping. I'm planning the menu now to find some camping foods we can make vegan. Luckily we like Morning Star Farms sausage. I also bought some Bocca Burgers. Black bean Chili may make an appearance too.
Tonight is left overs.slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-46695278094106413932012-06-08T10:37:00.000-07:002012-06-08T10:37:26.473-07:00Welcome to day 5 of the 21day kickstart india. Yesterday started with the usual oatmeal. I may try indian style next week. I did have a slip up at lunch but it was sushi so it was worth it. And I was very careful with portion control. Something I'm not know for when it comes to sushi. Last night was a new recipe and actually quite easy. I need to make a big batch of rice today as we keep waiting for the rice to cook. Tonight is leftovers unless we eat downtown; which will be a challenge as alcohol is involved.

Take cashews soaked in water, drain, and set soaking water aside. Place cashews in a blender and grind them into a fairly smooth paste. Add a little water, if needed, to make cashews into a paste. Steam mixed vegetables until tender.

Place onion, garlic, ginger, chilies, and poppy seeds (if using) in a food processor to create a coarse paste or mince them. Add paste to nonstick, heavy steel, or cast iron pan and sauté until the mixture becomes fragrant or until it just begins to brown a bit.

Add the turmeric, garam masala, and cardamom and stir. Then add tomatoes and cook, stirring, until tomatoes break down, approximately 3 minutes. Add soy yogurt and stir, letting the paste cook for another 2 to 3 minutes. Add salt, if using.

1 teaspoon (2.5 grams) ground cumin

1 teaspoon (2.5 grams) ground coriander

1/2 teaspoon (1 gram) chili powder or crushed red pepper

1/2 teaspoon (1 gram) turmeric (optional)

1 teaspoon (5 grams) grated fresh ginger

2 tomatoes, chopped

salt, to taste

1/2 cup (75 grams) chopped onion

2 bunches fresh spinach, chopped roughly and boiled in about 1/4 cup (60 milliliters) water until tender, or 1 16-ounce (315 grams) bag frozen spinach (approximately 4 cups steamed)

1/3 cup (80 grams) plain soy yogurt or other plant-based yogurt

To prepare the tofu, place it in a flat colander (or plate) with a
weight on top for at least half an hour, or preferably overnight,
keeping it in the refrigerator. One can also use a tofu press to prepare
it. Ensure all the water is drained and the tofu is suitable to
marinate. Cut tofu into cubes or roughly one-inch (2.5 centimeters)
squares.
While tofu is being pressed, mix together ginger, lemon or lime
juice, garam masala, and salt in a bowl adding water to the mixture if
it’s too thick.
Put the tofu cubes in the freshly-prepared marinade in a baking pan
and let it stand about 30 minutes to an hour, turning it a couple of
times to make sure all the surfaces absorb the marinade.

Optional step if oven is available, otherwise, just simmer tofu along with spinach in step below:

Bake tofu for about 20 minutes at 300 F (150 C).

While tofu is cooking, heat a large sauté pan and dry roast cumin,
coriander, chili powder or crushed red pepper, and turmeric over low
heat, otherwise the spices will burn. Add ginger and tomatoes with any
liquid from the tomatoes. Cook mixture over medium heat until the juice
from the tomatoes is almost evaporated and the tomatoes are cooked.

Separately, in a large sauté pan add a
little salt to the chopped onion and “fry” it in its own juice. Add
steamed spinach (and tofu if no oven). Add tomato and spice mixture and
let the mixture simmer for a few minutes to absorb the water. Then add
plant-based yogurt, mixing thoroughly. Add tofu cubes and cook until
warmed through.

We had the usual oatmeal ( the real kind you have to cook) with walnuts, cinnamon, flax seed meal and honey. There is an idian version of oatmeal but I haven't got that far yet. For lunch was Roti with vegetables in a fabulous spicy mix. I managed to forgo Panera sandwiches but did have some salad w/o chicken. Tonight is Palak Panner with tofu instead of cheese. It looks good on the video.
Still no word on the house. Hopefully the bank will accept or reject the offer on Tues.
I decided to start small so I began with our bedroom. You can see how bad it looks.
Right! Obviously my blog has taken back burner to everything else. Let's see what has happened lately:
1. My daughter came from Australia with my beautiful granddaughter, Anika. She stayed a short 5 weeks and every waking moment not spent at work was spent with them.
2. I did see the Yarn Harlot. She is funnier in person than in print. I had a great time and met a new knitting friend (whom I owe roving). I also got to go to several LA yarn stores; the Knit cafe was a big disappointment but the Stitch Cafe was fabulous (they dye their yarn for sale and very friendly).
3. I finally went to the Seattle area to see my parents. They live a bit north near Bellingham. Also go to see my good friends Lori and Tim with their boys Kai and Zane.
4. Sent Sarah back to Australia. I plan to spend summer there.
5. Now back in the overly stressed hectic world that is my life. And it seriously cuts into my knitting time. I just started teaching clinical nursing so for the next 6 weeks I'll comatose as I try to do that, teach health and, yes, I have a day job that I go to.
Well it will probably be mid Dec. before my next post.slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-18180281464588273702007-08-30T19:47:00.000-07:002007-08-30T19:53:28.952-07:00to exhausted to knitNature decided to unleash it's fury last night. No not in the middle of winter but the night before my 7:30AM class in the summer. We had fabulous thunder and lightening, the likes of which have not been seen on the Central coast in the 20 years I've lived here. It was quite specular and I'm sure I would have appreciated it if it wasn't 2am. I have a hard time appreciating anything at 2am. It's supposed to happen tonight but I doubt it will. I'm sure Murphy's law will step in as I have 5 days off of work and can sleep indefinitely. I am too exhausted to knit; my brain feels fuzzy. If I don't get a nature show tonight, I'll get 5 days of glorious knitting. Take that Murphy!slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-79089706043080924292007-08-26T17:43:00.000-07:002007-08-26T17:47:20.066-07:00exercise knittingI finally have time to use my new recumbent bike. Now I can knit w/o guilt. Talk about multitasking! I can exercise, knit and listen to podcasts. When football starts, podcasts will be replaced by Sun ( and Mon.) football.
Work just cuts into my knitting time. Today was spent getting ready for class on Tues. I'm really enjoying teaching again though. Just wish I didn't need to sleep!slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-10094280967432733002007-08-20T12:36:00.000-07:002007-08-20T12:46:55.115-07:00Knitting with friendsA lovely Saturday was spent knitting and shopping with friends. We've been having great sunny weather so it was perfect for knitting. In fact it was so warm we knit at Anne's (yarns at the Adobe) big room. The 5 of us (Eileen, Nancy, Jenni, Steph and myself) enjoyed a some knitting and (of course) yarn acquisition. Then it was on to fleece works in Morro Bay. What a find! I'm not a spinner but this certainly got me thinking about it. The roving is so soft! I did find some great, white merino blend that will be fabulous for dyeing ( I don't do that either, but I will!).
We then headed up to Cayucos for tea at the Cass House ( a restored Victorian). It was a lovely time with yummy treats and great tea. Several knitters did the tea tasting. I didn't know tea could be so varied. The only bummer of this nice day was that Ball and Skein in Cambria closed early so we didn't get to shop there. I'm a bit miffed, as they knew that 5 knitters with money were going to show up at the end of the day. I'm glad Jenni called to let them know we were on the way otherwise we would have driven all the way up there only to be disappointed. Oh well, Eileen's likes my business so I'll just go there (closer too)slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com0tag:blogger.com,1999:blog-7167407886858008881.post-86999091080858540132007-08-12T12:57:00.000-07:002007-08-12T13:04:20.129-07:00knitting atrocityWhile enjoying the company of friends and doing some pub knitting, I experienced a most astonishing knitting atrocity. Even now it's a horrid memory.
As I was sitting and knitting, talking to my friend Dave, an idiot, jerk, scum bag plopped 2 croquette's( fried potato balls) on my knitting needles . Yes fried goo sitting a top my needles in mid-knit. Outrage does little to describe my response. What type of evil, asshole would do that? I let go a torrent of explicatives that let him know he had committed a most egregious act against a knitter. I doubt he will show his greasy face there for quite sometime.slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com1tag:blogger.com,1999:blog-7167407886858008881.post-60260441359382030952007-08-08T20:30:00.001-07:002007-08-08T20:32:03.168-07:00Slow to startI know I'm slow to get going but you know it's knit or blog. Hmm! Then there's that darned thing called work that gets in the way of both. I think I will improve my Dragon naturally speaking software so I can knit and blog at the same time. heaven!slobeachgirlhttp://www.blogger.com/profile/00349800052980961533noreply@blogger.com1tag:blogger.com,1999:blog-7167407886858008881.post-74713696322401547652007-08-02T15:36:00.000-07:002007-08-02T15:41:39.559-07:00My blogThis is my first attempt at blogging; so we'll see how it goes.
